A vegan fast food restaurant will be opening its doors in Oxford, UK next month.
Happy Friday Kitchen, with its location on Cowley Road, will serve deep fried 'chicken' burgers, macaroni cheese, burritos, and pizza.
Founded by 24-four-year old Lola Dixon, the restaurant's fare is inspired by food she came across on a trip across California.
The entrepreneur, who is from Newbury, decided to open the plant-based eatery in Oxford due to the city's lack of vegan restaurants, yet large vegan community.
Dixon, a vegan since 2015, told the Oxford Mail: "I wanted to open a restaurant where meat-eaters, vegetarians and vegans could all come and enjoy their favourite comfort food.
"The name comes from my Dad texting me, my sister, and my Mum 'Happy Friday' every week and I want the restaurant to have a 'Friday feeling'."
Beside vegan fast food, diners will also be able to order healthy buddha bowls, as well as vegan coffee, hot chocolate, craft beer, and cocktails.
