'Anti Butcher': First Vegan Butcher/Deli Set To Open In Chicago Next Year

A Chicago-based couple has big plans to make the city more vegan-friendly - by opening its first entirely plant-based butcher and deli.

Ashouraita Khoshaba and Cole Bright want to open the eatery - dubbed 'The Anti Butcher' - in spring or summer next year.

The pair wants to show that 'vegans are not missing out in the slightest' and can enjoy all kinds of exciting food.

Khoshaba and Bright have launched a crowdfunding campaign to raise capital. Their goal is to raise $40,000.


According to the pair: "We have been creating artisan cruelty-free meats and cheeses in Chicago since the summer of 2015. 

"It is our greatest passion, and with your help, we hope to go far with it. We have attended numerous events in Chicago within the past two years and changed many minds along the way with our delectable meats and cheeses. 

"Our products are also available at a few stores across the country."

On offer

Once open, the shop would sell items including vegan meats and cheeses in deli cases as well as a small menu of items such as sandwiches and charcuterie plates. 

They adde: "We will have special roasts and meals for the holidays. 

"We will also offer homemade Middle Eastern pickles like turnips, torshi, and other mezze items. 

"Our shop will be perfect for those who want to dine in as well as those who want to quickly stop by to take some food home with them." 


The foodies are obsessed with flavor - calling it 'the most important aspect to vegan food'. 

They add: "It can dictate whether or not a person will go vegan. 

We believe that our use of traditional spices and the accurate textures of our products really sets us apart. Our customers' reactions really proves it. We have positively impacted many vegans and non-vegans alike. 

"One of the best feelings at every event we attend is when a doubtful omnivore absolutely loves our meats and cheeses. 

"There is almost nothing better than those moments and we hope to experience them even more once we open our shop."
