Plant-based chef Matthew Kenney has said 'the future of food is vegan'.
The chef, who has just opened a plant-based restaurant called Alibi in the Ovolo hotel in Sydney, Australia, claims the eatery will be a 'game-changer'.
He said vegan food can compete with traditionally popular Aussi staples like steaks and seafood by being 'sexier'.
Kenney said: "As a chef, my role is to make [people] come to [Alibi] because it's the best-tasting food.
"How do we compete with a steakhouse or a seafood restaurant? By making our food sexier."
The restaurant serves dishes including lasagne, dumplings, pizza, tacos, and a burger. Cheese toppings are made with plant ingredients including sunflower seeds and cashew nuts. There is also an extensive drinks menu.
Kenney added: "We were doing cutting-edge food many years ago but no hotel, landlord or building owner wanted a vegan restaurant because they thought it would fail.
"But once we start to serve this food in a mainstream environment that’s beautiful and sexy, it’s a gamechanger for the plant-based world.
"I believed in [veganism] 15 years ago. It's one thing that can slow down the damage we’re doing to our planet."
