The book, by Henry Firth and Ian Theasby, is is officially the best selling vegan cookbook of all time - selling more than 80,000 copies in the UK within 15 weeks of its release.
Firth and Theasby, who have been friends since their Sheffield school days, describe themselves as 'food remixers' - taking classic dishes and recreating them using nothing but plants, an approach which has resonated with their 1.5 million Facebook fans.
"It's honestly been the most inspiring year and we are humbled by everything that's happened," the pair posted on social media.
"So many people are making incredible moves to help the entire world eat more plants. Yes we know there is a lot more to do, and we have a long way to go, and the climate is still not looking good.
"But we always have a choice of perspective, and the positive way to look at where we are right now is that in just three years an incredible amount has changed."
Discussing progress made by the vegan food sector in recent years, PETA Director of Vegan Corporate Projects Dawn Carr, said: "From 'bleeding' burgers to dairy-free ricotta, food and beverage companies are upping the ante with innovative and delicious vegan options to meet the booming demand for cruelty-free fare.
"Concerns about health, the environment, and animal suffering are driving more and more people to select plant-based foods, which is why vegan eating is at an all-time high."
