The diabetes community at large is in favor of eating a low-carb diet. I completely understand the logic behind this -- because diabetes is characterized by having high blood sugar numbers, it seems to make sense to avoid foods that are high in carbohydrates and convert to sugar easily. However, science has shown us that this logic is faulty.
In reality, the majority of people with diabetes, regardless of type, are suffering from insulin resistance. It turns out that high blood sugar numbers are not the problem, but rather are a symptom of a larger problem, which is insulin resistance. Insulin resistance is caused by eating a diet high in fat. This leads to fat being stored in muscle and liver tissues, which inhibits insulin from being properly utilized by the body. Adopting a low-fat, plant-based, whole-food diet addresses this issue by clearing out that fat and therefore reversing insulin resistance. Once you address the cause of prediabetes and type 2 diabetes, the condition can be completely reversed in many cases. For those living with type 1 diabetes (like Dr. Khambatta and myself) and type 1.5 diabetes, reversing insulin resistance leads to more predictable numbers and decreased risk for long-term diabetes complications. It's truly as simple as just eating low-fat plant foods.
